It's the continuation of a family tradition rooted in the pastures of Karnes County, Texas. My father and grandfather raised cattle here long before it was easy—or profitable—to do so. Back in the '70s and '80s, our only option was the local auction barn, and prices weren’t exactly encouraging. We weren’t big then, and we’re still a small operation by industry standards—but that’s part of what makes this so personal.

Things changed around 2018. I set out to find a breed of cattle that could produce steaks far beyond just “prime.” I wanted prime plus plus—the kind of quality you’d be proud to serve your own family. That search led me to Wagyu, and not just any Wagyu, but registered cattle with a genetic lineage tracing all the way back to Japan. I improved our pastures, started growing coastal Bermuda, and before long, I had more incredible beef than my family could eat. Selling it at the auction barn wasn’t an option—I believed in the quality too much.  So, I started small—sharing with friends. Word spread. Demand grew. And here we are.
